Enchilada Beef and rice
INGREDIENTS
2.25 pounds 93/7 ground beef
2 packets of Siete mild taco seasoning
2 cups basmati rice
2 Knorrs tomato chicken bouillon cubes
White queso
Taco sauce
***additional toppings used***
Pico-10 calories per 2 tablespoons
Guacamole spicy mini-100 per cup
INSTRUCTIONS
1️⃣start 4 cups of water and the 2 buollion cubes on high heat to boil, when water starts to boil break up cubes stir in 2 cups of rice reduce heat, cover, and simmer until rice is tender and moisture is gone.
2️⃣crumble and cook ground beef in pan heated to med heat, season with taco packets and add in water a litte at a time until there is enough to mix into beef.
3️⃣heat a little cheese dip to thin out and begin to assemble bowls by measuring your rice topping with queso and measuring your beef for last layer
I used the same ratio with beef and rice but used only 2 tablespoons of queso on each bowl
(Example) 1 cup beef 1 cup rice
CALORIES AND PROTEIN
1 cup of each- 650 cal 50 grams pro
2/3 cup of each- 550 cal 32 grams pro
1/3 cup of each- 375 cal 25 gram pro
FIRST BOWL(husbands)
1&1/2 cups each topped with taco sauce and mini guacamole- 1125 cal 75 grams pro
SECOND BOWL(mine)
1 cup of each and with taco sauce and pico- 660 cal 50 grams pro
Last bowl is the toddler friendly version.
