These scallops prevent the blade from sticking, making slicing smooth and keeping your cuts even. When slicing, start by positioning the knife point first on the meat. As soon as the blade contacts the beef, pull it back slightly. This method—pushing the knife straight down to the cutting board and then sliding it backward—gives you control and results in clean, straight slices without shredding the meat. Take your time, and let the knife do the work. The quality of your beef also matters. Aim for pieces with good marbling; the intramuscular fat keeps the meat tender and flavorful. For larger cuts, trimming excess fat is fine—you can save the trimmings for grinding or other recipes. I often find that about one and a half kilos of trim per large piece is reasonable.
