I saw this Beef pho by Snapdragon at Costco (later found at WinCo along with other flavors) and had to give it a try!
I added some air fried chicken nuggets, thin sliced white onion, green onion, Thai basil, and squeezed half a lime into my bowl.
I have in the past added bean sprouts and jalapeno slices to make it an extra big, veggie filled bowl. I used the microwave method to prepare but if adding a lot of veggies, definitely go for the "kettle" cooking method. We don't have a kettle so just a pot of hot water works also and cook the noodles and broth in a bigger bowl. Also, if you have beef on hand, this would go great but the chicken nuggets work in a pinch 😁
... Read moreOkay, so we all know the struggle of wanting something delicious but having zero time. That's why instant pho, especially brands like Snapdragon, are a lifesaver! I'm always looking for ways to elevate mine beyond just adding water, and I wanted to share some more ideas to make your bowls even better.
Whether you're grabbing the Snapdragon Beef Pho (like I did for my chicken nugget creation!) or their Chicken Pho, the base is surprisingly good for a quick meal. I've found them at Costco and WinCo, but keep an eye out in the international aisle of your local grocery store too – sometimes they surprise you with different flavors or sizes!
Beyond my speedy chicken nugget hack, there are so many ways to customize your bowl. If you're craving a more traditional beef pho experience, thin slices of raw beef (like sirloin or even shaved steak from the deli) cook perfectly when submerged in the hot broth for a minute or two. For those who prefer chicken pho, cooked shredded chicken breast or even rotisserie chicken works wonders to add protein and flavor. Don't forget the fresh herbs! Beyond Thai basil, cilantro, mint, and green onions are non-negotiable for that authentic, fragrant flavor. And a good squeeze of lime brightens everything up, cutting through the richness beautifully.
The flat noodles in Snapdragon pho are pretty good, but if you want to make it extra special, you could even briefly boil some fresh pho noodles separately and add them for a chewier texture. And of course, no pho experience is complete without a trusty pair of chopsticks for slurping up those delicious strands!
To really bulk up your meal and make it super nutritious, fresh veggies are key. Bean sprouts are a classic, offering a lovely crunch, but don't stop there. Sliced jalapeños (if you like a kick!), thinly sliced bell peppers, spinach, or even some quickly blanched bok choy can transform your instant pho into a restaurant-worthy dish. My go-to is usually a mix of whatever I have in the fridge that needs using up – it's a great way to reduce food waste!
The microwave method is super easy, but if you're adding lots of extras, I totally recommend the 'kettle' method (or just using a regular pot of hot water). It ensures everything heats through evenly and gives you more space to stir in your goodies without making a mess. Plus, it feels a bit more like you're actually 'cooking' a proper meal!
A dash of Sriracha or hoisin sauce on the side for dipping your meats or stirring directly into the broth can also take your pho to the next level. Sometimes I'll whip up a quick dipping sauce with a little soy sauce, lime juice, and a pinch of chili flakes for an extra zing.
To make these 'lazy' lunches even lazier (in the best way!), I sometimes do a little prep on the weekend. Slicing onions, washing herbs, or even cooking and shredding some chicken ahead of time means that when hunger strikes, it's literally just a matter of assembling and heating. This way, even on the busiest weekdays, you can still enjoy a wholesome and flavorful meal without resorting to less healthy options. It’s all about working smarter, not harder, especially when it comes to delicious food!
So next time you're staring at that instant Snapdragon pho packet, don't just see a quick meal – see a canvas for culinary creativity! It's amazing how a few fresh ingredients can turn a lazy lunch into something truly special.
Add a squeeze of lime next time as well, thank me later
