Zero-Waste, Budget-Friendly Soup
Tonight I turned a pile of leftover veg into the cosiest bowl of roast pepper tomato(ish) soup, and honestly… this might be my new favourite budget-friendly comfort meal for autumn 🍂🍅✨
I roasted everything together — peppers, onions, tomatoes, and a whole bulb of garlic (because roasted garlic makes everything taste like you tried harder than you did 😌🧄). I added thyme, olive oil, salt + pepper and mixed it all together on the sheet pan, before chucking in the oven for 35mins at 200° (fan assisted. knock it up to 220 if your oven isn't fan)
Then blended it into a creamy, velvety soup that gives cosy jumper energy and that rare, quiet five minutes of peace ✨
Heated it through with a splash of single cream for extra-indulgent silkiness, plus a cheeky knob of butter, more salt, and cracked black pepper for depth.
Served it with gluten-free ciabatta, roasted garlic butter, parmesan, red Leicester and melty mozzarella… basically a cheesy autumn dream for under a few quid. All from the odds and ends left in the cheese stash.
