What I Meal Prepped This Week & How Much I Spent

It’s been awhile since I last updated, and also awhile since i actually meal prepped. Life has been pretty hectic and I’ve been surviving on cup noodles and bread for lunch (definitely not the healthiest😅).

But new month, new me right? ✨

I’ve decided to get back on track with meal prepping again. This time, for lunches and also freezing extra portions for dinner (for those days I’m just tired of outside food). Mostly because I want to be healthier and more intentional with what i eat.

🛒 Groceries I Bought:

- Fruits ( Strawberries & Blueberries)

- Cherry Tomatoes (For soup & salads)

- Tofu (For soup)

- Enoki Mushroom (For soup)

- Black Pepper Boneless Chicken Thigh (Easy air-fry dinners)

- Wawa Cabbage (For soup)

- Quarter-cut pumpkin (For both lunch & dinner)

- Broccoli Mix (For lunch & dinner)

🍽️ What I Prepared

I didn’t follow a strict menu this week - I just wanted easy-to-cook ingredients that can be mixed and matched depending on my mood. Plus, I recently bought a heating lunch box so I don’t have to rely on microwave anymore!

🥦Broccoli Mix

Boiled the entire pack, cooled it and portioned into ziplock bags, and froze them. Super versatile, can pair with lunch or dinner anytime.

🎃Pumpkin

Since I don’t really like rice, pumpkin is my go-to carb alternative (together with konjac noodles). I seasoned it with olive oil, black pepper, and herbs. Air-fried it, and stored it in ziplock bags in the freezer. Perfect for air-frying again while i shower!

🍜Solo Hotpot

One of my favs - I prepped cabbage, tofu, cherry tomatoes and enoki mushrooms. When i get home, i just throw them into a pot with konjac noodles, let it cook while i shower, and dinner is ready.

🍗Chicken Breast

Still had 3 pieces from my previous grocery run. I sliced and portioned them into ziplock bags. Easy to pair with vegetables and pumpkin for a balanced meal.

Nothing too fancy this week - just simple, healthy(ish) and convenient! I’m excited to get back into this routine, and (hopefully) stick to it for a month. Let’s see how much I can save too!

For anyone looking to start, I’d recommend picking a handful of staple ingredients that can be used in multiple ways, investing in some good storage options like ziplock bags, and finding small conveniences — like a lunch heating box — that fit your lifestyle. It really makes healthy eating achievable, sustainable, and enjoyable.
