It’s truly perfect for marinades, stews, and adding that authentic, deep red hue to your Mexican and Caribbean cooking. Think cochinita pibil, pollo pibil, or even just a fantastic rub for grilled meats and veggies. Here’s what you’ll need to whip up your own vibrant achiote paste (often called recado rojo or annatto paste): 1/4 cup achiote (annatto) seeds: These are the star, providing both color and earthy flavor. 1/2 cup bitter orange juice: This is traditional! If you can't find it, a mix of 1/4 cup regular orange juice and 1/4 cup fresh lime juice works beautifully. 1/4 cup white vinegar: Helps to tenderize meats and balance the flavors. 2-3 cloves fresh garlic: Just like in our infused oil, fresh garlic really brings out the best flavor.
