let’s make my puerto rican (hot sauce) pique 🇵🇷❤️ i can literally drink this😭

3/5 Edited to

... Read moreOkay, so you've seen how simple it is to whip up a batch of this incredible Puerto Rican pique, but let me tell you, there's a little more to making it truly *sing*! For me, a good pique isn't just a hot sauce; it's a flavor enhancer, a conversation starter, and a piece of home on the table. First, let's talk peppers. The OCR mentioned 'aji dulee peppers,' which are fantastic for an authentic, milder flavor and are traditionally used. However, don't be afraid to experiment! If you love a serious kick, mix in some habanero, scotch bonnet, or even ghost peppers. Just remember to wear gloves when handling hotter varieties and avoid touching your eyes! I usually go for a mix – a few aji dulee for their unique sweetness and aroma, and then a couple of hotter peppers for that fiery punch. The key is to slice them thinly or roughly chop them so their flavors can infuse beautifully into the liquid as the pique sets. Next up, the unsung heroes: garlic cloves and fresh oregano. Don't skimp on these! I usually add several peeled garlic cloves, sometimes even slightly crushed to release their full aroma and flavor. And fresh oregano? It makes all the difference, providing a vibrant, earthy note that's incomparable. If you can't find fresh, dried will work in a pinch, but the fresh leaves truly elevate the pique. Now for the spices. The OCR mentioned 'black peppercorns' and 'coriander seeds.' These aren't just for heat; they add complex aromatic layers and a subtle warmth. I like to lightly crush my peppercorns and coriander seeds to help them release their essential oils, which intensifies their flavor in the infusion. And then, for balance, a 'teaspoon of salt' and 'half a teaspoon of sugar.' The sugar isn't to make it sweet, but to round out the flavors and temper the acidity of the vinegar, making the pique incredibly smooth and balanced – you'll barely notice it's there, but you'd miss it if it wasn't. As for the liquid base – 'cup of vinegar,' 'tablespoon of olive oil,' and 'half a cup of water' – this ratio is crucial for both flavor and preservation. The vinegar provides the tang, acts as a natural preservative, and helps extract flavors from the other ingredients. The olive oil adds a lovely richness and helps carry the flavors of the peppers and spices. The water thins it out just enough so it's not overpoweringly acidic. You can use white vinegar or even apple cider vinegar for a slightly different profile, depending on your preference. Putting it all together: Make sure your jar is clean and preferably sterilized to ensure your pique lasts longer. I like to layer my ingredients, starting with some peppers, then garlic, oregano, and spices, and then repeating until the jar is mostly full. Then, pour in your liquid mixture, ensuring all the solids are submerged. The OCR mentioned to 'mix that well and let that set.' This 'setting' part is so important! For the best flavor, you really need to let it sit for at least a week, preferably two, in a cool, dark place. The longer it sits, the more the flavors meld and intensify. I've had jars last for months, getting better with age! Finally, how to enjoy this liquid gold? Beyond 'aguacate' (avocados) and 'ensalada' (salad), I put it on everything! Eggs, rice and beans, grilled meats, even my morning toast when I'm feeling adventurous. It’s perfect for bringing a vibrant, spicy, and authentic kick to any dish. Trust me, once you start making your own pique, you'll wonder how you ever lived without it. It's more than just a hot sauce; it's a staple that truly brings food to life.
