This Jamaican classic comes from the Maroons, enslaved Africans who escaped captivity and built free communities in Jamaica. They developed jerk cooking, a method of slow-smoking meats over pimento wood, seasoned with scotch bonnet peppers, allspice, and fresh herbs.

🔥 Authentic Jerk Chicken Recipe 🔥

✔️ 4 bone-in, skin-on chicken thighs (or preferred cut)
✔️ 1 tbsp CMX Complete Seasoning (#CMXComplete )
✔️ 1 tbsp ChefMade Southern Heat Seasoning (#ChefMadeSouthernHeat )
✔️ 2 tbsp allspice
✔️ 2 scotch bonnet peppers (or habanero), finely chopped
✔️ 1 tbsp fresh thyme
✔️ 1 tsp black pepper
✔️ 1 tsp salt
✔️ 2 tbsp soy sauce
✔️ 2 tbsp brown sugar
✔️ 1 tbsp fresh lime juice
✔️ 3 cloves garlic, minced
✔️ ½ inch fresh ginger, grated
✔️ 2 tbsp vegetable oil
🔥 How to Make It:
1️⃣ Blend all ingredients (except chicken) into a thick marinade.
2️⃣ Coat chicken thoroughly & marinate at least 4 hours (overnight is best).
3️⃣ Grill over medium heat for 35-40 minutes, turning occasionally.
4️⃣ Serve with rice & peas, fried plantains, or slaw.
