Pretzel rolls

Ingredients

* 2½ tsp yeast

* ¼ cup brown sugar

* 3 tbsp melted butter

* 1 1/4 tsp salt

* 3½ cups warm water

* 5–5½ cups bread flour

1. Whisk yeast, 1 cup flour and 1 cup warm water to make a starter dough. Allow to rest for 45 minutes

2. Mix in melted butter, sugar and salt. Add 3 cups flour, then up to 1 cup more until dough is slightly tacky and pulls from sides.

3. Knead 3–5 minutes (by hand or mixer) until soft and elastic.

4. Shape into a ball, cover, and proof for 30-45 min

5. Preheat the oven to 400°F (204°C). Line baking sheets.

6. Cut dough into portions. Roll into logs.

7. Boil pretzels in 5 cups water and 2 tbsp baking soda for 20–30 seconds; drain well.

8. Place on baking sheets lined with parchement paper or a silcone mat, sprinkle with coarse salt.

9. Bake 12–15 minutes until dark golden brown.

Finish with melted butter right after they come out of the oven
