🍓 Strawberry Shortcake Cheesecake Rolls 🍰
Saw this recipe and wanted to share. I always buy an abundance of strawberries this time of year and run out of things to make. I saw this dessert and thought it would make the perfect end of summer dessert.
Creamy cheesecake filling, sweet strawberries, and a crunchy shortcake layer rolled into a fun sushi-inspired dessert. Perfect for parties or a unique treat!
Ingredients:
Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract
1 cup heavy whipping cream
Strawberry Filling:
1 cup fresh strawberries, diced
2 tbsp granulated sugar
Shortcake Layer:
1 1/2 cups crushed shortbread cookies or graham crackers
1/4 cup unsalted butter, melted
Rolls:
6 large crepes or thin cake layers (store-bought or homemade)
Powdered sugar (for dusting)
Directions:
Prepare the Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Whip heavy cream to stiff peaks and fold into the cream cheese mixture.
Prepare the Strawberry Filling: Mix diced strawberries with sugar and let sit for 10 minutes to macerate.
Prepare the Shortcake Layer: Combine crushed cookies or graham crackers with melted butter until it resembles wet sand.
Assemble the Rolls: Lay out a crepe or cake layer, spread with cheesecake filling, sprinkle with shortcake mixture, and add strawberry filling. Roll tightly into a sushi roll shape.
Chill & Slice: Wrap rolls in plastic wrap and chill for at least 1 hour. Slice into 1-inch pieces.
Serve: Arrange on a platter and dust with powdered sugar. Enjoy!
