1. Ingredients (Serves 4)

✅ Main Ingredients:

• 1 unripe papaya (about 500g)

• 400g pork bones (marrow bones or ribs)

• 1 shallot

• 1 stalk of green onion

• A few sprigs of cilantro

• 1 small piece of ginger

• 1.5 liters of water

✅ Seasonings:

• 1 tsp salt

• ½ tsp pepper

• 1 tbsp fish sauce

• ½ tsp seasoning powder

• ½ tsp sugar

2. How to Make Papaya Bone Broth

🔹 Step 1: Prepare the Ingredients

1. Rinse the pork bones in diluted salt water, then blanch them in boiling water for 2-3 minutes to remove impurities. Rinse again with clean water.

2. Peel the papaya, remove the seeds, and cut into bite-sized pieces. For a crunchier texture, soak in lightly salted water for 10 minutes, then rinse.

3. Peel and finely chop the shallot. Slice the ginger thinly. Rinse and chop the green onion and cilantro.

🔹 Step 2: Simmer the Bones

1. In a pot, bring 1.5 liters of water to a boil, then add the pork bones, shallot, and ginger slices.

2. Skim off any foam to keep the broth clear. Lower the heat and simmer for 40-50 minutes to extract the natural sweetness from the bones.

1. Once the broth is rich in flavor, add the papaya and simmer for another 10-15 minutes until soft.

2. Season with salt, seasoning powder, fish sauce, and sugar. Stir well and adjust to taste.
