Try this crock pot barbacoa 😋

Rich, savory, grass-fed beef slow cooked in a spicy, tangy sauce…it’ll MEAT all your dinner expectations!

Ingredients:

Barbacoa Sauce-

4 chipotle chiles in adobo sauce

5 garlic cloves

1 1/2 cups beef broth

1/4 cup lime juice

1/4 cup apple cider vinegar

1 TB ground cumin

1 TB oregano

1/2 tsp ground cloves

Roast-

3 pound Beef chuck roast

Salt & pepper

2 TB vegetable oil

2 bay leaves

Instructions:

Blend together sauce ingredients and set aside

Cut chuck roast into 4 pieces and season with salt and pepper

Heat cooking oil in pan over medium heat

Add chuck roast to pan and sear until browned on all sides

Place roast to slow cooker

Add sauce and bay leaves

Cover and cook on low 8-10 hours, until tender and easy to shred

Serve in tacos, burritos, bowls, quesadillas or eat by the spoonful!
