I used to be intimidated, but after a few tries, I've cracked the code to perfectly fluffy, soft, fragrant, and sweet buns every single time. From my experience, the secret starts with the right ingredients and technique. For the dough, I always begin by dissolving 70g of brown sugar in 145ml of warm water. Make sure the water isn't too hot, or it'll kill your yeast! Then, I add 3g of high sugar tolerance yeast, give it a little stir, and let it sit for about 5 minutes to activate. You'll know it's ready when you see a foamy layer on top – that means your yeast is alive and ready to work its magic! Next, I gradually add 300g of plain flour or all-purpose flour. I stir until there is no dry flour left, creating a shaggy dough. This is where the fun (and a bit of a workout!) begins. I transfer the dough to a clean surface and knead it by hand until it's smooth and elastic. This usually takes me about 10-15 minutes. A well-kneaded dough is key to those fluffy buns.
