This was SO GOOD and so affordable to make! I like making because I can cook a large amount of taco meat the night before and just assemble these quickly during my lunch breaks!

Low sodium taco seasoning: 💵 Price: .47
Small container Daisy light sour cream: $1.72
Daisy light cottage cheese: 💵 Price: $4.36
Bag of small Hass Avocado’s: 💵 Price: $2.97/bag
Directions:
Brown taco meat and add seasoning
Seam sweet potatoes the last 5 mins of cooking your taco meat.
Cut/mash avocado while potatoes and meat are cooking
Add to bowl:
Sweet potatoes (about 1/4-1/2 of the bag depending on portion size preference)
Taco meat (1/2-1 cup)
Avocado, cottage cheese, sour cream and taco sauce amounts as preferred and Enjoy!!
