Street Corn Chicken Rice Bowl

A vibrant and flavorful dish!

Ingredients:

For the Chicken:

1 pound boneless, skinless chicken breasts

1 tablespoon olive oil

1/2 teaspoon chili powder

1/4 teaspoon cumin

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/8 teaspoon black pepper

For the Street Corn:

2 ears of corn, shucked and kernels removed

1 tablespoon butter

1/2 teaspoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/8 teaspoon black pepper

1/4 cup crumbled cotija cheese

1/4 cup chopped cilantro

For the Sauce:

1/4 cup mayonnaise

1 tablespoon lime juice

1/2 teaspoon sriracha

1/4 teaspoon garlic powder

1/8 teaspoon salt

1/8 teaspoon black pepper

Instructions:

Prepare the Chicken:

In a small bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper.

Rub the marinade over the chicken breasts.

Grill the chicken breasts over medium-high heat for 6-8 minutes per side, or until cooked through. Let cool slightly, then slice.

Prepare the Street Corn:

In a large skillet, melt butter over medium heat. Add corn kernels, chili powder, garlic powder, salt, and pepper. Cook for 5-7 minutes, or until slightly charred and tender.

Stir in cotija cheese and cilantro.

Make the Sauce:

In a small bowl, combine mayonnaise, lime juice, sriracha, garlic powder, salt, and pepper. Mix well.

Assemble the Bowls:

Divide cooked rice among bowls.

Top with grilled chicken, street corn, and drizzle with the sauce.

Tips:
