.
1 lb Chicken (tenders, thighs, whatever you like)
2 tsp Pepper
1 1/2 tsp Salt
1 tsp Smoked Paprika
1/2 Cup Italian Dressing
2 Cups Thinly Sliced Romain
2 Tbsp Parmesan Chunks
1 Tbsp Finely Grated Parmesan
2 Tbsp Caesar Dressing
8 Slices Garlic Texas Toast
.
Add chicken, spices, and Italian dressing to a bag and marinate for at least 1 hour. Prepare grill for direct grilling. Add chicken and grill until charred & cooked through. Allow chicken to rest for 10 minutes before dicing into cubes. Bake Texas Toast until crunchy, a bit overdone even, to help mimic the crunch of a crouton. Now add lettuce, chicken, and Caesar dressing to a bowl, mix until coated then add in the parm chunks & finely grated parm. Press down the center of the bread and stuff with a generous handful of the salad mix. Top with extra parm and enjoy!

I've always been a huge fan of Caesar salad, but let's be real, sometimes you want something a little more exciting, something you can truly dig into without chasing lettuce all over your plate. That's exactly why I fell head over heels for these Grilled Chicken Caesar Salad Toast Boats! They take everything you love about a classic Caesar – the crisp romaine, the tender grilled chicken, the tangy dressing, and crunchy croutons – and package it into the most delightful, handheld 'boat' made from garlic Texas toast. It's a brilliant way to enjoy a salad that feels more like a substantial meal, and it’s surprisingly easy to pull off! One of the things I love most about this recipe is its versatility. While the original recipe calls for grilled chicken, which gives it that incredible smoky char, you can absolutely adapt this based on what you have or your preferences. If grilling isn't an option, pan-searing or baking your chicken tenders or thighs works just as wonderfully. Just make sure to season them well! For a different flavor profile, sometimes I'll swap the Italian dressing marinade for a lemon-herb marinade, or even a spicy dry rub if I'm craving a little kick. And if you're short on time, using a pre-cooked rotisserie chicken is a fantastic shortcut that cuts down on prep without sacrificing flavor. Just shred it and toss it in! Beyond the chicken, there are so many ways to customize your Caesar salad filling. While classic Caesar is perfect, I often find myself adding a few extra goodies to my toast boats. Thinly sliced red onion or a handful of cherry tomatoes can add a burst of freshness and color. Crispy bacon bits are always a welcome addition, and for an extra cheesy punch, a sprinkle of crumbled feta or goat cheese alongside the Parmesan can be divine. If you're feeling adventurous, try making your own Caesar dressing from scratch – it’s easier than you think and tastes so much fresher! A good homemade dressing with fresh garlic and lemon juice can elevate this dish to another level. The 'boat' itself is a star, and while garlic Texas toast is my absolute favorite for its rich flavor and sturdy structure, you can experiment with other breads. Thick-cut challah or brioche can make for a slightly sweeter, richer boat. Just remember to toast it well to ensure it holds up to the salad filling. A pro tip I learned: baking the toast until it's a bit 'overdone' (but not burnt!) really helps mimic that crouton crunch and prevents it from getting soggy too quickly. If you're planning to serve these at a party, smaller, bite-sized toast pieces (like cut-up baguette slices) make for excellent appetizers. These toast boats are not just delicious; they're incredibly practical too. They make for a fantastic quick lunch, a satisfying weeknight dinner, or even a show-stopping appetizer for a casual get-together. The best part? They're relatively mess-free compared to a traditional salad, making them perfect for eating on the couch or a picnic. To prevent them from getting soggy if you're making them ahead, keep the salad mix separate from the toasted bread and assemble them right before serving. Trust me, once you try these Grilled Chicken Caesar Salad Toast Boats, they'll quickly become a regular in your meal rotation!
