Smreka, the gut heath gin alternative

This is one of the easiest fermentated drinks I’ve ever made

Taste: Refreshing, tangy, and bittersweet lemonade, gin like

Benefits: Promotes gut healt

Ingredients:

3/4 cup organic juniper berries

1 quart water

Directions

1. Pour juniper berries and water into a quart jar.

Cap it with a plastic lid, or place parchment paper under a metal lid before sealing.

2. Place the jar in a fermentation spot. Sometimes juniper berry juice (smreka) will ferment for 7 days, and sometimes way beyond 15 days. The only requirement is that the spot is relatively warm. Doesn't have to be exposed to sunlight.

3. Shake every day. “Burp” every few days. Burping simply means opening the lid to release the gasses & to prevent the formation of surface molds.

4. Strain into a separate quart jar after 10 to 30 days. (Save the berries) tip below.

5. Add other ingredients to taste. Ideas, lemon, honey, lavender.

Makes approximately 1 quart

Tips:

▪️You can reuse the berries for a second batch.

▪️You can add it to your mocktails as a gin alternative

▪️You can add a teaspoon of sugar or honey after the initial fermentation period.

▪️If too strong dilute with water.

▪️ add honey & fresh lemon juice before fermentation to speed up the fermentation process (2 whole lemons)

▪️ Store in fridge for up to 2 weeks after fermentation
