Made Everything Soondubu Jjigae (spicy soft tofu stew) with some left over pork butt, shrimp, small octopus and Korean crabs. Also had a crazy craving for Korean oysters so made some Guljeon (oyster pancakes). We used to live in Tongyong in Korea which was the home of Korean oysters so it made us miss all the delicious seafood we used to eat back home.

... Read moreMaking seafood Soondubu Jjigae at home is a rewarding experience, especially when using fresh ingredients like pork butt, shrimp, small octopus, and Korean crabs to create a rich, flavorful broth. One tip I’ve learned is to layer the flavors by simmering the seafood gently to keep them tender and maximize their taste without overpowering the spicy soft tofu stew’s delicate texture. This hearty stew pairs wonderfully with Guljeon, Korean oyster pancakes, which add a crispy, savory contrast to the meal. Growing up or living in areas like Tongyong, South Korea, known for its high-quality oysters, really influences the craving for these local specialties. Tongyong oysters are renowned for their sweetness and freshness, and recreating those flavors at home often means selecting the best available oysters and pairing them with simple batter and green onions to make the perfect Guljeon. When serving these dishes, I like to add a bowl of steamed rice alongside the Soondubu Jjigae to soak up the spicy broth, creating a balanced and comforting meal. Sharing this meal often sparks conversations about the tastes of home and the nostalgic memories tied to coastal seafood delicacies. For anyone exploring Korean cuisine, trying to replicate the vibrant seafood dishes from Tongyong is a fun challenge that brings a piece of Korea into your kitchen.
