Cooking from Your Roots ❤️

At this point in my life, as an adult living far from my parents and having not seen my family for a long time, I find myself craving the foods my parents and grandmother cooked when I was younger.

Out of love, curiosity, and a desire to keep my parents engaged and stir up their memories, I’ve taken it upon myself to ask them for recipes. It's comforting to hear them describe these dishes. I also look up recipes online for the dishes I remember. As a child of Ukrainian and Russian parents, I’ve been deeply affected by the turmoil and emotional conflict due to the war, even within my own family. Remembering the comfort foods from my childhood gives me a sense of peace.

I am in no way a chef and rarely cook full meals, but this is something dear to me because I don't have much access to my culture where I live. Recently, I made a Russian-Ukrainian beet salad for the first time. It’s incredibly delicious, and I wish more people in the Western world knew about these dishes because they would be a great alternative to the ones we already know in the US. I'm always genuinely curious about foods from different cultures. I think what I miss in the US is a curiosity that extends beyond popular options like Korean bbq or sushi, which many people seem to lack.

Vinegret Salad Recipe

Ingredients:

* Beets: Choose fresh, crisp, dark-colored beets. Avoid those with soft spots. Pre-boiled or canned beets can also be used.

* Potatoes: Boil until tender.

* Carrots: Boil with the potatoes.

* Green onions: Chopped.

* Small white or yellow onion: Chopped.

* Peas: Fresh or frozen (cooked), or canned (drained).

* Pickles: For a tangy taste and crunchy texture.

* Olive oil, white or apple cider vinegar, salt, and black pepper: For dressing.

* Optional: Kidney beans and sauerkraut.

1. Cook the Beets:

* If using fresh beets, boil them whole and unpeeled in water for about an hour until tender.

* If using canned beets, drain the liquid.

* Do not boil beets with other vegetables to avoid turning everything pink.

2. Cook Potatoes and Carrots:

* In a separate pot, boil potatoes and carrots together until tender (about 30 minutes). Avoid overcooking to maintain their shape when sliced.

3. Prepare and Mix:

* Dice the cooked beets, potatoes, and carrots.

* Combine with chopped green onions, small onion, peas, and pickles.

4. Dress the Salad:

* Add olive oil, vinegar, salt, and black pepper.

* Mix well.

5. Optional Additions:

* Stir in kidney beans and sauerkraut if desired.

Beyond its beautiful, earthy colors from the diced beets, carrots, and peas, Vinegret is incredibly versatile and often served during holidays like New Year's or other family celebrations. It’s a staple because it’s hearty, nutritious, and can be prepared ahead of time—a lifesaver for busy hosts! When I was arranging the ingredients, seeing the whole potatoes, green peas, kidney beans, pickles, and green onions all laid out on my counter, along with the oil and seasonings, it felt like I was setting up for a feast. The image of those fresh, colorful ingredients in a metal bowl truly embodies the spirit of 'Cooking from Your Roots.' One thing I've learned is that the key to a truly delicious Vinegret lies in the details. While the recipe is straightforward, a few tricks can elevate it.
