Feeding Toddlers | BEET & CARROT MUFFINS 2 WAYS🥕

When it comes to food, my toddlers could not be more opposites. My son prefers sweet foods & my daughter prefers savory foods.

That’s why I make these beet & carrot muffins 2 different ways. Both recipes are made with ZERO SUGAR & added NUTRIENTS. Recipe instructions down below⬇️

I use my leftover pulp from juicing but you can also make this with shredded beets & carrots.

⭐️MOM HACK: double the batch & freeze for a quick & healthy snack or side.

Goo im the freezer for up to 3 months.

👩🏻‍🍳INSTRUCTIONS: (for both recipes)

1. Preheat oven to 375°F (175°C) & line a muffin tin with liners or grease it well.

2. Mix wet ingredients in a large bowl

3. Add the pulp: Fold in the beet and carrot pulp or shreds ensuring it’s evenly distributed.

4. Combine dry ingredients in another bowl.

5. Mix together: Gradually add the dry mixture into the wet mixture & stir until just combined.

6. Scoop into muffin tin: Divide the batter evenly among the muffin cups, filling them about ¾ full.

7. Bake sweet muffins for 20-25 mins & savory muffins for 25-30 mins.

8. Cool & enjoy: Allow the muffins to cool completely on a wire rack. They’ll firm up as they cool!

By making them zero sugar, we're setting our kids up for healthier eating habits right from the start, avoiding those sugary highs and lows. And here’s a little secret: even using the pulp from juicing means you're getting all that fantastic fiber too! For those of you with picky eaters, these healthy toddler muffins are a game-changer. The vibrant colors from the beets and carrots are naturally appealing, and baking them into a muffin makes them less intimidating than a plate of steamed veggies. I've found that letting my kids help mix (when appropriate) or choose their own muffin (sweet or savory!) makes them more likely to try it. Thinking about variations? If you don't have a juicer, no worries! Finely shredding fresh beets and carrots works perfectly.
