Dessert time!

Soft Chewy peanut butter chocolate chip cookies:

Ingredients:

2 cups of flour

1/4 tsp of baking soda

1 cup of white sugar

1 cup of peanut butter

1 cup of chocolate chips

2 eggs

Dash of vanilla extract

Detailed Steps:

1. Preheat the oven to 350 degrees and spray cookie sheet with cooking spray to prevent sticking. You can use parchment paper if you want as well.

2. In a mixing bowl beat together eggs, vanilla extract, sugar, and peanut butter together. The amount of peanut butter is up to you.

3. Add in flour and baking soda and mix together until it is a dough like consistency that can be rolled into balls.

4. Fold in chocolate chips.

5. Roll into 1” balls and spread on cookie sheet 1” apart.

6. Bake in the oven for about 8 minutes or until the bottom of cookies are light brown. This is important as you don’t want them too hard.

7. Let them rest after baking and serve or eat hot whichever you prefer!

I personally loved how this recipe turned out and highly recommend making these! It’s easy on those who have dental issues too. #bakingfromscratch #lemon8contest

One tip I found helpful is to not overbake the cookies; removing them when the bottoms turn a light brown ensures they remain soft rather than hardening as they cool. Using parchment paper or well-greased baking sheets helps the cookies release easily without breaking. In my experience, adjusting the peanut butter quantity slightly can personalize the taste – some prefer a richer peanut butter flavor, so feel free to add a bit more if you like. Also, chilling the dough for 30 minutes before baking can improve texture and help prevent spreading. For those mindful of texture due to dental sensitivity, these cookies offer a gentle chew without being too tough. Additionally, folding in the chocolate chips gently helps them stay evenly distributed, giving each bite a perfect blend of peanut butter and chocolate. This recipe is quite versatile; you can substitute white sugar with brown sugar for a deeper flavor or add a pinch of salt to balance the sweetness. Serving the cookies warm enhances their softness and makes the chocolate chips melty, which is always a crowd-pleaser. Enjoying freshly baked cookies with a glass of cold milk or your favorite hot beverage makes dessert time even more special.
