It’s a classic for a reason, and I want to share how I make it extra delicious and simple enough for any weeknight! First up, the baked chicken. I love using bone-in, skin-on thighs or drumsticks for maximum flavor, but breasts work beautifully too – just adjust your cooking time. My secret to super juicy and flavorful chicken is a simple rub. I mix olive oil with plenty of minced garlic (can you tell I love garlic?), dried herbs like oregano and thyme, smoked paprika for a lovely color and depth, salt, and pepper. Really get that rub all over the seasoned chicken, even under the skin if you’re brave! Then, I bake it at around 400°F (200°C) until the skin is crispy and golden, and the internal temperature reaches 165°F (74°C). It usually takes about 35-45 minutes depending on the cut. Now, for those incredible garlic mashed potatoes. Forget bland, lumpy mash! I use Russet or Yukon Gold potatoes; they get wonderfully fluffy. After peeling and cubing them, I boil them until fork-tender. Here’s a pro tip for garlic lovers: while the potatoes are boiling, gently sauté some minced garlic in butter or olive oil until fragrant, but don't let it brown. Once the potatoes are drained, I add that buttery garlic mixture, warm milk or cream, a pat of butter, and a generous pinch of salt and pepper. I mash them until they're perfectly smooth and creamy. Sometimes, I even use a piping bag to create those cute, decorative white shapes on the plate, just like you see in fancy restaurants – it makes dinner feel so much more special! And to complete this perfect trio, the green beans. I like mine crisp-tender, not mushy. I usually steam them for about 5-7 minutes, then quickly sauté them in a pan with a little olive oil, a squeeze of lemon juice, and a sprinkle of toasted slivered almonds for crunch. A dash of garlic powder here also ties everything together with the rest of the meal. They add that fresh, vibrant pop of color and a healthy crunch that balances the richness of the chicken and potatoes.
