I recently whipped up a batch of these OREO Mini Protein Cheesecakes, and wow, they're a total game-changer for satisfying that sweet tooth while staying on track! What I love most is how simple they are to make. The base of plain non-fat Greek yogurt and 2% cottage cheese creates an incredibly creamy texture, mimicking traditional cheesecake perfectly but with a huge protein boost and significantly fewer calories. I find that a good vanilla whey/casein blend protein powder is key here – it blends smoothly and bakes beautifully without drying out. Make sure to blend everything really well until it's super smooth and lump-free, especially the cottage cheese, for that ideal cheesecake consistency. Now, for the cooking part! After blending all the ingredients, I like to pour the mixture into small cupcake molds, often with a crushed Oreo Thin at the bottom for that authentic flavor. An air fryer works wonders for these! I typically air fry them on 250 degrees for about 15-17 minutes. Cooking times can vary, so keep an eye on them until they're set but still slightly wobbly in the center. Once they're out, the crucial step is letting them cool completely, then transferring them to the fridge for about 30-60 minutes to firm up properly. This really helps them hold their shape and develop that perfect cheesecake texture. To make these mini cheesecakes extra special, I always add toppings! A dollop of fat-free whip cream instantly elevates them, and a sprinkle of crushed Oreo Thin pieces on top makes them feel super indulgent. You could also drizzle a little sugar-free chocolate syrup or add some fresh berries for a different twist. If you don't have an air fryer, don't worry! You can bake them in a conventional oven at a low temperature, around 275-300°F (135-150°C), for a similar duration until set. Just watch them closely. These are fantastic for meal prep.
