Refreshing Apple Cranberry Carrot Salad

Ingredients:

. 1 red apple, thinly sliced into matchsticks

. 1 green apple, thinly sliced into matchsticks

. 1 tablespoon lemon juice

. 1 cup matchstick carrots

. 1/4 small yellow onion, thinly sliced

. 1/3 cup dried cranberries

. 1/2 cup canned mandarin segments, drained and halved

. 1/4 cup vanilla yogurt

. 2 tablespoons mayonnaise

. 1 teaspoon sugar

. Salt and pepper, to taste

Directions:

1. In a large bowl, toss the red and green apple matchsticks with lemon juice to prevent browning and to brighten their flavor.

2. Add the matchstick carrots, sliced yellow onion, dried cranberries, and mandarin segments to the bowl with the apples. Gently mix to combine.

3. In a separate small bowl, whisk together the vanilla yogurt, mayonnaise, sugar, salt, and pepper until smooth and creamy.

4. Pour the dressing over the salad ingredients and toss gently until everything is evenly coated.

5. Let the salad chill in the refrigerator for at least 20–30 minutes to allow the flavors to meld.

6. Before serving, give it a light toss and adjust the seasoning if necessary. Serve cold as a refreshing side or a light, colorful lunch.
