Healthy Chicken stir fry with hibachi yumyum sauce
🐓 Ingredients 🫑
- 1 package of thin chicken breast sliced
- 1 1/2 cups broccoli florets
- 1 red bell pepper
- 1 yellow bell pepper
- 1 yellow onion sliced
- white rice
- 3 tbsp soy sauce or coconut aminos
- 2 tbsp neutral oil (avocado, sunflower, etc.)
- 2 tbsp sriracha
- 2 tbsp white vinegar or rice vinegar
- 2 tbsp sweet chili sauce
- 1 tbsp gochujang paste (optional)
- pepper
- onion powder
- garlic powder
- paprika
- umami seasoning (optional)
- optionally garnish with cucumber, lime wedge, avocado, pickles onion, cilantro, basil etc.
🫙 YUMYUM SAUCE 🌶️
- 1/4 cup mayo
- 3 tbsp sweet chili sauce
- 1/2 tbsp sriracha
📝 Instructions ✏️
- cook rice per package instructions
- season sliced chicken with umami seasoning (or salt), paprika, garlic powder and onion powder. Set aside.
- bring large deep pan or wok to medium heat
- add 1 tbsp neutral oil
- add onions and cook until soft, translucent and lightly browned
- add broccoli and sliced peppers
- cook until soft and slightly browned about 5 minutes
- deglaze pan with 1 tbsp vinegar and 1 tbsp soy sauce
- add garlic powder, onion powder, and pepper
- add 1 tbsp sweet chili sauce
- let cook for an additional minute and remove veggies from pan to set aside
- add a second tbsp of oil to the hot pan
- add chicken and cook until fully cooked through and slightly browned
- deglaze pan with 1 tbsp vinegar and 1 tbsp soy sauce
- add 1 tbsp gochujang paste (and or sriracha)
- add 1 tbsp sweet chili sauce
- bring heat down to low
- add veggies back into the cooked chicken and stir
- 🫙 FOR THE YUMYUM SAUCE 🫙
- add mayo, 3 tbsp sweet chili sauce and 1/2 tbsp sriracha to a bowl and stir.
Assemble chicken and veggies over white rice. Top
With yum yum sauce and any additional toppings!
