... Read moreI'm so excited to share more about this high-protein Mediterranean chicken bowl because it's truly become a staple in my healthy eating routine. When life gets busy, I always fall back on recipes that are not only delicious but also packed with nutrients and easy to make. This bowl checks all those boxes and more! You know how sometimes you want something healthy but don't want to compromise on flavor? That's exactly what this bowl delivers. It's inspired by those vibrant Mediterranean flavors I adore, and the best part is, it's incredibly satisfying. With 60g of protein and just 500 calories, it's perfect whether you're aiming for a calorie deficit or just trying to get enough protein in your day. I find it keeps me full for hours without feeling heavy. Let's dive a little deeper into how I make this magic happen. The star of the show, of course, is the seasoned chicken breast. My trick for perfectly tender and flavorful chicken is to liberaly season it with a blend of onion powder, garlic salt, pepper, and some mixed garlic and herbs. Then, I pop it into the air fryer. If you don't have an air fryer, you can easily bake or pan-sear it. The air fryer just gives it this amazing crispy exterior while keeping the inside juicy. Next up, the roasted fingerling potatoes. I absolutely love fingerling potatoes for their creamy texture when roasted. For this bowl, I toss them with a drizzle of olive oil and a good sprinkle of my favorite spice blend – usually something with paprika and a hint of rosemary. They go right into the air fryer alongside the chicken, which makes cooking super efficient. You get that lovely, slightly charred roast on them, and they add such a comforting element to the meal. If you're watching carbs or prefer a different type of healthy carb, you could easily swap these out for a small portion of quinoa or even some roasted sweet potato cubes. Now, for the refreshing elements that truly make it a Mediterranean bowl: the diced cucumber and homemade tzatziki sauce. I love the crisp bite of fresh cucumber – it adds a wonderful contrast to the cooked chicken and potatoes. As for the tzatziki, it's surprisingly simple to make from scratch! I combine thick, creamy Greek yogurt (which also boosts the protein content!), fresh dill, a squeeze of lemon juice, and a pinch of salt and pepper. To finish it off, I add a touch of olive oil and some of the diced cucumbers directly into the sauce for extra texture and freshness. This creamy, tangy sauce really ties all the flavors together and is a game-changer! Trust me, once you make your own, you won't go back to store-bought. For those wondering about variations, this bowl is incredibly versatile. If you're a vegetarian or just want to switch things up, you could easily make a delicious Mediterranean chickpea bowl by roasting seasoned chickpeas instead of chicken. Or, if you prefer a different healthy carb, a small serving of brown rice could turn this into a healthy chicken rice bowl without necessarily making it a 'high calorie chicken rice bowl' if portioned correctly. The key is balance! I’ve also sometimes added a sprinkle of feta cheese or some chopped olives for extra Mediterranean flair. This truly is a versatile protein bowl chicken yogurt cucumber combination that you can adapt to your taste and dietary needs. I hope this gives you a bit more insight into why this high-protein Mediterranean bowl has become such a favorite for me. It's not just a recipe; it's a template for a healthy, quick, and incredibly satisfying meal that you can enjoy any night of the week!
