Savory Veggie Pie 🥧
Premade vegan frozen pie crust. Pre bake then layer in the ingredients. There’s so many mix and match variations. I usually layer with fresh spinach at the bottom. Warmed seasoned prepared polenta slices. Steamed onions, tomatoes and zucchini. I like adding mushrooms, squash too. This is one of many different variations I’ve made. I love that it’s semi homemade.
One of the reasons I love making this savory veggie pie is how adaptable it is to whatever fresh vegetables you have on hand. For example, if you find seasonal produce like asparagus or bell peppers, those work wonderfully layered into the pie as well. Using a premade vegan frozen pie crust makes the process so much faster without sacrificing flavor or texture. I always prebake the crust first to ensure it stays crisp even after adding the filling. The seasoned polenta slices add a comforting, slightly creamy texture and a subtle corn flavor that elevates the pie without overpowering the vegetables. I recommend warming and seasoning them with herbs like thyme or rosemary for an extra flavor boost. When layering, starting with fresh spinach at the bottom ensures it wilts nicely during baking, blending beautifully with the tomatoes, zucchini, and any mushrooms or squash you add. This pie is great for meal prepping too. You can assemble it ahead of time and bake it when ready, making it perfect for busy weeknights or potluck dishes. Pair it with a fresh green salad or a light vegan soup for a complete meal. I find that experimenting with different veggies and seasoning combinations keeps this recipe exciting and allows me to adapt it to different seasons and dietary preferences. It's an easy semi-homemade dish that never disappoints and is a hit among family and friends looking for wholesome vegan options.
