Veggie Soup
This semi homemade soup is so easy and delicious.
I used pantry vegetable broth and added water, fresh spinach, canned tomatoes seasoned with basil and garlic.
I garnished with left over steamed brown rice, steamed green beans and fava bean tofu.
It would be great with homemade croutons.
Get creative in the kitchen and have fun.
Making a wholesome veggie soup at home doesn't have to be complicated or time-consuming. Using pantry staples like vegetable broth and canned tomatoes provides a flavorful base that you can easily customize. Adding fresh spinach not only boosts the nutritional value with vitamins and minerals but also gives the soup a vibrant green color that is visually appealing. I often enhance my soups by incorporating leftover grains such as steamed brown rice. They add a nice texture and make the dish more filling. Similarly, steamed green beans provide a satisfying crunch, while fava bean tofu is a great plant-based protein option that enhances the umami flavors of the soup. To bring even more flavor and texture, homemade croutons make an excellent garnish. Simply cube some bread, toss with olive oil and your favorite herbs, then bake until crisp. This adds a delightful contrast to the soft vegetables. One of the best parts about this recipe is its flexibility. You can get creative by adding other vegetables you have on hand, such as carrots, celery, or zucchini. Seasonings like basil and garlic are staples, but feel free to experiment with thyme, rosemary, or even a pinch of chili flakes for some heat. This soup is not only vegan but also ideal for meal prepping, as it keeps well in the fridge and tastes even better the next day. It’s a perfect way to enjoy a warm, comforting meal while sticking to a healthy eating plan.
