Quinoa Salad

This super easy quick meal is packed with flavors.

Quinoa with spinach, tomatoes and garlic steamed in the package. I added canned chickpeas, smoked sun-dried tomatoes and pumpkin seeds. There’s a variety of textures. It’s light and filling. Perfect anytime of day. Serve as a stand alone meal or side dish.

The quinoa is a perfect base for any toppings you’d like to add. Excellent idea for entertaining. Make a salad station. Items like walnuts, slivered almonds or cashews would be great. Fresh arugula or watercress would also be good. Plant protein such as tofu, lentils or edamame would enhance the nutritional value.
