Buffalo Chicken Nuggets

Quick and Simple High-Protein Meal

Buffalo chicken nuggets are so easy to make at home! It’s low carb and high protein so enjoy a guilt free meal or snack.

Buffalo Chicken Nuggets

1 lb. Ground chicken

2/3 cup shredded cheese (I used a cheese blend)

1 tsp paprika

2 tsp garlic salt

3 tbsp buffalo sauce

1/2 cup grated parmesan

2 tbsp almond flour

Avocado oil spray

Preheat oven to 375f.

In a large bowl, mix the chicken, shredded cheese, paprika, garlic salt, and buffalo sauce until well combined.

In another bowl combine the grated parmesan cheese and the almond flour.

Form into nugget shaped patties. Then coat each nugget in the parmesan mixture on both sides. I got about 15 large sized nuggets out of the mixture. The chicken mixture will also be very sticky so it helps to work fast and dip fingers into the parmesan mixture as you go along.

Place on parchment paper on a large baking sheet and spray the top with avocado oil.

Bake for about 20-22 minutes. Some cheese will melt out and that’s what you want. Make sure the chicken is cooked through. The internal temp should be 165f.
