Low Carb Breakfast Biscuits

The best morning breakfast that feels like a full meal all in one biscuit! My low carb breakfast biscuits are tender and filled with sausage, eggs, and cheese. Enjoy these and not have to worry about blood sugar spikes.

Low carb breakfast biscuits

2 cups almond flour (200g)

2 tsp baking powder

4 eggs beaten

2 tbsp sour cream

2 tbsp melted butter

1 cup shredded cheddar cheese plus extra for topping (freshly grated)

8 oz. bulk sausage

1/4 cup green onions

Preheat oven to 400f.

Brown the sausage and break into small pieces until fully cooked. Set aside.

Shred the cheddar cheese and slice the green onions.

In a large bowl mix the almond flour with the baking powder until clump free.

Beat eggs, then add the sour cream and melted butter (cooled, so that you don’t scramble your eggs) and mix until combined.

Add wet ingredients to the almond flour mixture and mix until a wet dough forms.

Add cooked sausage, 1 cup of shredded cheese, and the green onions and fold in until evenly distributed.

Using an ice cream scoop, portion out the biscuits and place the dough on a sheet pan with parchment paper. This should yield 10 biscuits.

Flatten the tops of the biscuits a little bit by pressing down on it. Then add a little bit more shredded cheese on top.

Bake in the oven for about 11-12 minutes.

Let these cool for 5 minutes before enjoying.
