Deliciously Quick: Lamb Lollipops in Minutes

Juicy lamb lollipops with cilantro mint sauce

1.5 lb rack of lamb (frenched and sliced)

Avocado oil (enough to coat all of the lamb)

1 tsp salt

1/2 tsp black pepper

1/2 tsp onion powder

1/2 tsp of thyme

1/2 tsp of oregano

Several dashes of Worcestershire sauce

Cilantro Mint Sauce

1/4 cup packed cilantro

1/4 cup packed mint

2 cloves of garlic

1/2 of a shallot

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

1 tsp sugar free maple syrup

Pinch of salt

Cut lamb between the bones to get individual lamb lollipops and trim excess fat if needed.

Coat the lamb with the avocado oil and all of the seasoning and set aside for at least 15-20 minutes. You want the lamb room temperature before cooking.

In a large pan over medium high heat add a little bit of avocado oil and cook the lamb on both sides for about 2.5-3 minutes per side. Each side should have a good sear on it.

Cook the lamb in batches so that you do not overcrowd the pan.

Remove from the pan and let it rest.

For the sauce combine all of the ingredients in a food processor and pulse until blended but not into a puree. You want to be able to see the cilantro and mint leaves.

Serve the lamb lollipops with the cilantro mint sauce and your favorite low carb side. Cauliflower mash goes great with this!
