Shepherd’s Pie
Ingredients:
-1 1/2 tbsp olive oil
-minced garlic
-1 medium onion, chopped
-1 carrot, chopped finely
-1 rib of celery, chopped finely
-3/4 tsp dried thyme and rosemary
-1 1/2lb ground beef
-1/4 cup flour
-1/4 cup tomato paste
-2 cups beef broth
-1/2 cup red wine
-1 beef bouillon cube, crumbled
-1 tbsp Worcestershire sauce
-2 dried bay leaves
-3/4 tsp salt
-1/2 tsp pepper
-1 cup frozen peas
Mashed Potatoes:
-2.2lbs potatoes, peeled and cut into cubes
-2/3 cup milk
-2 tbsp butter
Crust:
-2-3 tbsp grated Parmesan
-2 tbsp butter, melted
-fresh thyme leaves
Directions:
1. Heat oil in a large skillet. Add onion and garlic, cooking for 1 minute. Then add carrots, celery, thyme and rosemary.
2. Turn heat up to high and add ground beef. Cook until beef is browned.
3. Add flour and mix. Add tomato paste, beef broth, red wine, bouillon cube, Worcestershire sauce, and bay leaves. Stir to combine.
4. Bring to a simmer, then turn heat down to medium. Cook for 30 minutes, stirring occasionally, until it reduces down to a thick gravy consistency.
5. Add salt and pepper, taste, then adjust spices as needed. Transfer to a casserole dish. Stir in peas and refrigerate to cool for 1-2 hours or overnight.
6. Preheat oven to 350 degrees.
7. Cook potatoes in boiling water until fork tender. Drain then return to pot on stove. Allow to steam dry for 30 seconds.
8. Add butter and mash until melted, then add milk, salt and pepper. Mash until smooth and spreadable. Adjust with more milk if needed.
9. Spread mashed potatoes on top of meat mixture. Use a fork to draw lines throughout the dish. Sprinkle with Parmesan and drizzle with melted butter.
10. Bake for 30-40 minutes or until deep golden brown on top and sides are bubbling.
11. Let stand for 10 minutes before enjoying!
