Mimi’s Chicken & Dumplings

Ingredients:

-3 cups cooked chicken

-6-8 cups chicken broth

-2 cups all purpose flour

-2 tbsp butter

-1/2 tsp baking powder

-salt to taste

-1 cup of milk

Directions:

1. In a bowl, combine flour, baking powder, and salt. Cut the butter into the dry ingredients with a fork or pastry blender. Stir in the milk, mixing with a fork until the dough forms a ball.

2. Heavily flour a work surface. You’ll need a rolling pin and something to cut the dumplings with, like a pizza cutter.

3. Roll the dough out thin with the rolling pin covered in flour. Dip your cutter into flour and cut the dumplings in squares. They don’t have to be perfect.

4. Continue Step 3 until there is no more dough.

5. To cook them, bring the broth to a boil. Drop the dumplings in one at a time, stirring as you add them in. The extra flour on the dumplings will help your broth thicken up. Cook the. For about 15-30 minutes. Add the cooked chicken to your pot and season as desired.

6. Enjoy!

My favorite dish my grandmother cooked was her famous chicken and dumplings. I’ve since been able to make them exactly like hers and I make it every chance I get! As always, try it and let me know what you think!
