Cozy Chicken & Dumplings
If you’ve never rolled out dumplings before, don’t be intimidated. It’s actually easy and so delicious, and once you do it once you’ll never go back ✨
Ingredients
• 3 cups cooked shredded chicken (rotisserie makes this extra easy)
• 2 quarts chicken broth
• 2 cups all-purpose flour
• ½ teaspoon baking powder
• 2 Tablespoons cold salted butter, cubed
• 1 cup milk
• Extra all-purpose flour for your counter and rolling
How to Make It
1. Pour the chicken broth into a large pot and start warming it on the stovetop while you make the dumplings.
2. In a medium bowl, mix together the flour and baking powder. Add the cold cubed butter.
3. Use your fingers, a fork, or a pastry cutter to combine until the butter looks like tiny pebbles.
4. Pour in the milk and stir until a dough forms.
5. Generously flour your counter, place the dough down, and sprinkle more flour on top.
6. Roll the dough out to about ¼-inch thick, adding more flour as needed so nothing sticks.
7. Cut the dough into squares using a knife or pizza cutter.
8. Lightly dust the dumplings with more flour. This keeps them from sticking and helps thicken the broth later.
9. Bring the broth to a boil, add the shredded chicken, and stir.
10. Add dumplings one at a time, stirring often so they don’t clump together.
11. Let cook for 15–20 minutes. The broth will thicken and the dumplings will soften and sink slightly as they soak everything up.
12. Taste test a dumpling. Once there’s no doughy taste, it’s ready to serve.
