Ensalada de Pollo (Mexican Chicken Salad)
- 1 Rotisserie Chicken, de-boned and shredded
- 2 cans of sweet kernel corn, drained
- 2 jalapeño’s, de-seeded and diced small
- 2 bell peppers (your choice of color), de-seeded and diced small
- 4 small cucumbers, peeled and diced small
- Cilantro (however much you prefer), chopped small
- 1/2 Red Onion, diced small
- Juice of 4 limes (more if you prefer)
- 2 cups Mayonnaise
- Tostadas or Tortilla Chips
Directions:
1. Add all ingredients to a large bowl and mix.
2. Taste and add if needed.
3. Enjoy on tostadas or as a dip with chips!
