Savory Oxtail
The meat literally falls right off the bone! The oxtail becomes tender, savory, and packed with flavor influenced by African and Caribbean cuisine. Also just a reminder that this is not Jamaican oxtail! I posted that recipe back in October. I also wanted this recipe to be as low-effort as possible. I focused just on creating tender and delicious oxtail by simply using spices I could find in my cabinet. No searing, chopping, or having to babysit this dish. Just slow cook or pressure cook the oxtail. I served it with pasta and broccoli and ate leftovers over rice. Hope you enjoy!
Ingredients:
-3 lbs oxtail
-2 cups beef bone broth or stock, plus more if needed
-1/3 cup neutral oil
-2 tbs brown sugar
-2 tbs tomato paste
-2 tsp salt
-2 tsp pepper
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp ground ginger
-2 tsp smoked paprika
-2 tsp dried thyme
-1 tsp ground coriander
-1 tsp ground allspice
-1 tsp red chili flakes
-4 whole cloves
-2 dried bay leaves
-1 cinnamon stick
-parsley for garnish
Instructions:
-wash the oxtail with cold water and scrub with half of a lemon; strain and pat dry with paper towels
-place oxtail into a large mixing bowl
-in a smaller bowl, add in oil and all of the spices listed above (except for the whole cloves, bay leaves, and cinnamon stick)
-pour the marinade into the larger bowl with oxtail and mix well; allow to marinade for at least 30 minutes up to overnight
-transfer oxtail into a slow cooker or instant pot and add whole cloves, bay leaves, and a cinnamon stick
-cook on low for 6-8 hours until tender
-garnish with fresh parsley and serve with pasta or rice
