air fryer taco roll ups
It has been SO hot out recently, and I live in an old house with an HVAC that struggles to keep up. I have no desire to turn on my stove during the hottest part of the day to make dinner, so I’ve been making lots of air fryer and instant pot recipes because they don’t put off nearly as much heat. I’ve also started pre-preparing things like ground beef in the early mornings when it’s still cool out and doesn’t turn my house into a sauna. This is one of my favorite recipes resulting from just trying to stay cool!
This is a super easy dinner idea made even easier with just a little meal prep. These little spirals of goodness are perfectly crispy and packed with flavor, and have quickly become one of my household’s favorites - my husband started absolutely devouring them before I can get them off the air fryer tray and my toddler never leaves any of them unfinished.
Seasoning note: adjust the taco seasoning to your liking - there are no rules here! I use Penzey’s taco seasoning but you can use whatever you prefer - or make your own!
Taco Roll Ups
Recipe is for one roll up - I made five for two adults and a toddler, so adjust according to your needs!
- 1 medium flour tortilla
- 1 tbsp cream cheese
- 1 tsp taco seasoning
- 1/4c cooked and taco seasoned ground beef
- Mexican cheese
- 1/2 tbsp melted butter
- melt the cream cheese in microwave for about 15 seconds, til stirable. Add taco seasoning a mix well.
- spread cream cheese mixture over tortilla, top with ground beef and Mexican cheese
- roll tortilla up and brush with melted butter. You can also use olive oil, I just like the way butter works with it better. You don’t need a lot, you just want a thin layer to help the tortilla crisp up.
- slice into rounds and place in single layer on air fryer basket/tray. top with more cheese if desired.
- air fry at 370* for 11 minutes
- serve with sour cream for dipping
