Pizza night

It’s my turn to cook with @hexclad and I am breaking in my new pizza steel. Now “crust” me when I tell you that this pizza was evenly cooked a had such lovely brown coloring on the bottom. Ta-“‘za”! But let's be real, sometimes it's hard to get that amazing, crispy crust you find at your favorite pizzeria, right? For years, I struggled with soggy bottoms or unevenly cooked pizzas, even with a pizza stone. That's when I discovered the magic of a good pizza steel, and honestly, it's been a game-changer for my homemade pizza nights! If you're wondering what the big deal is, it all comes down to heat. Ovens fluctuate in temperature, and a regular baking sheet or even a thin pizza stone just can't hold and transfer heat as efficiently. A pizza steel, like my trusty HEXCLAD PIZZA STEEL, is designed to conduct heat much faster and retain it far better than stone. This means when you launch your pizza onto it, you get an immediate burst of high, even heat directly to the bottom of your crust. That's how you achieve that glorious, perfectly browned, and crispy base in just minutes – no more sad, pale crusts! For those of you thinking about exploring the world of homemade pizza and maybe even a 'DIY' approach to your perfect pie, investing in a pizza steel is the first step, even if you’re not literally making the steel yourself! Here’s what I learned along the way: Choosing Your Pizza Steel: You'll find steels made from carbon steel or stainless steel. Carbon steel often needs a bit of seasoning, similar to a cast-iron pan, to develop a non-stick surface and prevent rust. Stainless steel is usually lower maintenance. Thicker steels generally retain heat better, but they also take longer to preheat. Consider your oven size and how often you'll be using it when picking the right dimensions. My Hexclad steel has been fantastic for its durability and even heating. Preheating is Key: This is crucial! Don't rush it. I always preheat my oven with the pizza steel inside for at least 45 minutes to an hour, aiming for 500-550°F (260-290°C) if my oven goes that high. You want the steel to be screaming hot, ready to give your pizza that shock of heat it needs. Launching Your Pizza: This can be a bit intimidating at first, but practice makes perfect! I dust my pizza peel generously with semolina flour or a mix of semolina and all-purpose flour. This creates tiny ball bearings that help the raw dough slide right off. Get your pizza built quickly on the peel, making sure it's not sticking, and then swiftly slide it onto the preheated steel. It's like a quick, confident push and pull motion. Don't be afraid to just go for it! Baking Time: Once your pizza is on the steel, it cooks fast! Depending on your dough and toppings, it can be ready in as little as 5-8 minutes. Keep an eye on it – you'll see the crust puff up and begin to brown, and the cheese will be bubbling and slightly golden. Cleaning and Care: For most steels, a simple scrape with a metal spatula to remove any stuck bits, followed by a wipe down with a damp cloth, is all you need once it’s cooled. If you have a carbon steel, a light re-oiling after cleaning will keep it in prime condition. Honestly, getting a pizza steel has elevated my home cooking so much. It's truly a tool that transforms your kitchen into a mini-pizzeria.
