Well, it usually starts with the filling. In Guerrero, you'll often find them filled with seasoned shredded chicken or a simple, perfectly mashed potato mixture. The magic truly happens when those corn tortillas, filled and rolled tightly, hit the hot oil. They fry up to an incredible golden crispness that gives you that satisfying crunch with every bite. But here’s the secret, the game-changer: the consomé.
