There’s nothing like chimichurri at the BBQ ✨Here’s my recipe ⬇️
2 cups of parsley (big bunch) or 1/2 chopped
3 cloves of garlic
2 TBSP red wine vinegar
3/4 teaspoon dried oregano
2 TBSP chopped shallots
1 teaspoon kosher salt
1/4 teaspoon Black pepper
1/2 cup olive oil
Place all ingredients in a food processor with only 1/4 olive oil pulse. Use spatula to scrape around the food processor and pulse again add the remaining olive oil and keep pulsing. Don’t over pulse ❤️. Place in air tight container and refrigerate. So easy so good. Everyone is going to love it
Have you tried it?
Chimichurri is one of those magical sauces that brings a fresh, vibrant burst of flavor to any meal, especially grilled meats. I’ve personally found that the quality of the parsley and olive oil really makes a difference in the final taste, so opting for fresh, organic parsley and a good extra virgin olive oil can elevate the sauce even more. When preparing chimichurri, I stick closely to the technique of pulsing the ingredients in a food processor rather than blending continuously. This helps maintain a slightly chunky texture, which I prefer over a completely smooth sauce. It’s a balance because over-processing can cause the herbs to lose their brightness. Red wine vinegar adds the essential tanginess that cuts through the richness of grilled steak or chicken, while the shallots provide a mild sweetness and depth. If you want to experiment, sometimes adding a pinch of red pepper flakes introduces a bit of heat that pairs wonderfully with the fresh herbs. I also like to make chimichurri ahead of time and refrigerate it overnight. This resting period allows the flavors to meld beautifully, resulting in an even more harmonious taste the next day. Just make sure to bring it to room temperature before serving for the best experience. This versatile sauce isn’t just limited to BBQ — I often use it as a marinade or even drizzle it on roasted vegetables or grilled fish. Friends and family are always asking for the recipe, which makes it one of my staple go-to sauces in the kitchen. Overall, this chimichurri recipe is simple, fresh, and incredibly satisfying — a must-try for anyone wanting to add a flavorful punch to their meals.
