This is my hyper fixation for the moment lol. This meal is high in fiber and protein for those in a caloric deficit and if you want more protein you can have some chicken breast on the side. Not only is this super yummy and healthy but also economic! What I love about this recipe is how customizable it is—I usually start by sautĂ©ing garlic and tomatoes to build a natural sweetness before adding the lentils. Adding beef broth instead of chicken broth really amps up the richness and depth of flavor, making it feel more hearty without extra fat. For seasoning, cumin and tomato bouillon add a warming, aromatic touch that complements the lentils and carrots perfectly. The cooking process is simple: simmering the lentils with broth and water for about 25-30 minutes, then adding diced carrots to cook until tender. This method ensures the vegetables retain some texture while blending well with the lentils. I also like to sprinkle fresh cilantro on top for that fresh herbal note whenever I have it. Sometimes, I top the soup with queso fresco or any mild cheese for a creamy contrast, which adds a nice indulgence without ruining the healthiness. Accompanying the soup with low-carb tortillas or baked tostadas turns it into a complete and satisfying meal.
