If you're a fan of combining classic flavors with a fun twist, these Mini Peeps S’mores Pies are a delightful treat that everyone will enjoy. The comforting blend of chocolate and marshmallow inside a mini graham cracker crust is elevated with the use of colorful Peeps marshmallows, adding a festive visual appeal perfect for Easter or any springtime gathering. One tip I found useful when making these pies is to slightly chill the cookie dough before shaping it over the filling. This helps the dough stay firm, making it easier to mold into a neat circle without tearing or shrinking too much during baking. You can also experiment with sprinkles on top of the cookie dough before baking to add a fun crunch and extra color. Using mini graham cracker pie shells saves a lot of prep time, but if you prefer, you can make your own crust by crushing graham crackers and mixing them with melted butter before pressing into mini muffin tins. When selecting your chocolate bars, opt for a high-quality semi-sweet or milk chocolate for the best melty texture. Alternatively, you could substitute chocolate chips or chunks. The baking temperature of 350°F ensures the cookie dough cooks evenly without burning the marshmallow peek. Keep an eye during the last few minutes of baking to achieve that perfect golden-brown top. These pies are fun to make with kids too, as they get to layer the fillings and see the magic of baking marshmallow s’mores in pie form. After baking, let them cool for a few minutes before eating so the chocolate slightly sets but the marshmallow remains gooey. This recipe is also customizable: try adding a pinch of cinnamon or a drop of vanilla extract into the cookie dough for added depth of flavor or swap Peeps for classic marshmallows if desired. Overall, this is a simple, crowd-pleasing dessert that brings traditional s’mores flavors into an adorable mini pie format perfect for sharing.
