Way too LONG Post!!!!!

Breakfast- I don't know why I thought spam was going to be good or why I had spam in the pantry, but I did!!! Maybe I was craving a taste of Hawaii. However, after trying it, I quickly realized that it's was on of the most amazing breakfast I have made myself in years. Eggs, rice and spam for breakfast who would have thought? I encourage you to follow @Sikfan Kitchen for great ideas for dishes and I did enjoy trying something out of my comfort zone for breakfast. New Year, New me!!! 431 calories to start the morning $4.25 a serving, but “ free” to me girl Math!!!

Lunch- I was surprised how delicious and effortless this dish was. Four simple ingredients came together perfectly. Broccoli,Alfredo sauce, chicken and Parmesan cheese for only 265 calories per serving made 6 servings and costing just $1.91 per serving. Disclaimer- I shredded the chicken in the blender because I was too lazy to shredded it by hand, so it gave it a weird texture. That was my bad!!! I highly recommend trying out this simple recipe for a quick and tasty meal from @HomeCookVibe

Snack- Some may argue that eggs are not a healthy snack because of their cholesterol content, but I disagree!! This egg salad recipe only requires five simple ingredients. I also got to use fresh eggs from my own chickens they have been laying like crazy, it's a win-win situation! Thank you @Mom for this perfect recipe for a party of one. It made enough to have an egg sandwich tomorrow. 106 calories per serving it made three servings and technically cost $6.25 per serving but “free” to me because I had everything in the pantry.

Today I ate for $55.79 but girl math I ate for $11.50. I have three meal prep dinners, one lunch and tons of ingredients left over to go with other dishes this week.
