Fresh ingredients air-flown from Japan 3x a week!

Had such a beautiful dining experience at 𝗚𝗮𝗻𝗸𝗼 𝗦𝘂𝘀𝗵𝗶, the kind that stays with you long after the meal. ✨The moment I stepped in, I was mesmerised by the high ceilings, natural light, cleanliness and that modern Japanese calmness. It feels tucked away from the busy city even though it’s just steps from 𝙳𝚑𝚘𝚋𝚢 𝙶𝚑𝚊𝚞𝚝 𝙼𝚁𝚃.

We started with a 𝗖𝗼𝗺𝗽𝗹𝗶𝗺𝗲𝗻𝘁𝗮𝗿𝘆 𝗔𝗽𝗽𝗲𝘁𝗶𝘀𝗲𝗿, then moved on to their 𝗦𝗲𝗮𝘀𝗼𝗻𝗮𝗹 𝗣𝗿𝗲𝗺𝗶𝘂𝗺 𝗖𝗵𝗮𝘄𝗮𝗻𝗺𝘂𝘀𝗵𝗶:

🍃 Zuwaigani snow crab flake with ikura and a hint of yuzu zest in clear thickened broth

🌼 Anago with caviar in a delicate chrysanthemum kogiku-an

Both were silky, fragrant and such a gentle way to begin the meal.

Then came the showstoppers:

🍚 𝗚𝗮𝗻𝗸𝗼 𝗧𝗮𝗸𝘂𝗺𝗶 𝗗𝗼𝗻 (𝗧𝗿𝘂𝗳𝗳𝗹𝗲 𝗥𝗶𝗰𝗲) layered with Akami, Hotate, Unagi/Anago, Salmon Belly/Salmon, Tai, Shimaaji, Negitoro, Oba, Kogiku and ikura - a whole mix of premium cuts that tasted incredibly fresh and vibrant.

🍣 𝗧𝘀𝘂𝗯𝗮𝗸𝗶 𝗡𝗶𝗴𝗶𝗿𝗶 𝗣𝗹𝗮𝘁𝘁𝗲𝗿 (𝟳 𝗽𝗰𝘀) — premium sushi pieces plus the soft and slightly sweet Atsuyaki Tamago that has texture like a cake, so special.

Here comes my favourite:

🦞 𝗧𝗵𝗲 𝗟𝗼𝗯𝘀𝘁𝗲𝗿 𝗙𝗼𝗶𝗲 𝗚𝗿𝗮𝘀 𝘄𝗶𝘁𝗵 𝗨𝗻𝗶 𝗗𝗼𝗻.

So rich, so creamy, so indulgent… every spoonful felt like the perfect blend of ocean sweetness and buttery umami. Honestly the dish I’m still thinking about.

We finished with the comforting 𝗦𝗲𝗮𝘀𝗼𝗻𝗮𝗹 𝗙𝗶𝘀𝗵 𝗦𝗵𝗮𝗯𝘂-𝗦𝗵𝗮𝗯𝘂, swishing the thin slices of fish with cabbage, mizuna, leek and mushrooms.

All their ingredients are 𝚊𝚒𝚛-𝚏𝚕𝚘𝚠𝚗 𝚏𝚛𝚘𝚖 𝙹𝚊𝚙𝚊𝚗 𝚝𝚑𝚛𝚎𝚎 𝚝𝚒𝚖𝚎𝚜 𝚊 𝚠𝚎𝚎𝚔 and I can really taste the freshness in every bite. Truly unforgettable!
