Blueberry Syrup

If you like blueberries then your going to love this blueberry syrup. It’s the perfect sweetener for coffee and tea just trust me. Can we also talk about how aesthetic this syrup is? It’s turns out such a beautiful color!

All you need is blueberries, sugar, and water! I used 1/2 cup coconut sugar and 1/2 cup white sugar for this recipe so let’s talk about substitutions. I don’t recommend using brown sugar in place of coconut because it alters the color and flavor of the syrup. But you can just substitute for more white sugar in place of coconut sugar.

I hope you give it a try! 🫐

Ingredients

1 cup blueberries

1/2 cup coconut sugar (can substitute white sugar here)

1/2 cup white sugar

1 cup water

Directions

1. Heat all ingredients on medium heat, stirring frequently.

2. Optionally can muddle blueberries but this should happen naturally as they cook down.

3. After 8-10 mins on heat the syrup should have slightly reduced. Remove from heat.

4. Let cool for about 15 mins.

5. Pour syrup through a fine mesh strainer.

6. Store syrup in a syrup bottle ot sealable container.

7. Store in fridge it should last about 14 days. If left out it should last about a week.

Coconut sugar is often praised for its lower glycemic index, and while it's still sugar, using it allows for a slightly different, more nuanced sweetness. For those really focusing on a 'healthy blueberry syrup', you could experiment with reducing the overall sugar content or substituting some of the white sugar with alternatives like a natural sweetener such as maple syrup or a small amount of stevia. Just be aware that these substitutions can alter the flavor and consistency, so it might take a little experimenting to find your perfect blend.
