Forget your usual olive oil; here, we're diving into the rich, vibrant world of Palm oil. This isn't just for cooking; it's a flavor powerhouse that imparts a beautiful color and a deep, earthy taste that's foundational to many Nigerian dishes. Paired with a robust Pepper mix – usually a blend of bell peppers, tomatoes, onions, and scotch bonnet or habanero peppers – it creates a sauce base that's both spicy and incredibly aromatic. But the real secret weapon, in my opinion, is Locust beans, known locally as iru or dawadawa. These fermented beans are an umami bomb! They add a complex, savory depth to the sauce that's hard to replicate with anything else.
