Colorful Food Diaries
Meals Ive been eating lately.
I've been adding more veggies to stay full.
For ex the sandwich in the beginning included a great amount of spring mix, bell peppers, onion ( not too much w/ onion ) and if you consider tomato and cucumber a vegetable lol. I know it's talks about if they are considered a veggie or a fruit.
All this goodness on one slice of sour dough bread that I split in half.

Incorporating colorful vegetables into your daily meals is a simple yet effective way to enhance both flavor and nutrition. From my experience, using a variety of fresh greens and crunchy bell peppers not only adds texture but also ensures a good intake of essential vitamins and fiber, which are crucial for prolonged fullness and energy throughout the day. When building a sandwich like the one described, balancing flavors is key. For instance, using a moderate amount of onion prevents the sharpness from overpowering the other ingredients, creating harmony with the sweetness of tomatoes and the coolness of cucumbers. Sourdough bread serves as an excellent base due to its tangy flavor and chewy texture, which complements the fresh vegetables perfectly. Beyond taste, including diverse vegetables supports digestive health and offers antioxidants that help combat inflammation. If you're wondering whether tomatoes and cucumbers count as vegetables or fruits, it's interesting to note that botanically they are fruits, but culinarily they fit well into vegetable dishes, adding a refreshing twist. Additionally, these colorful meals align well with wellness goals such as maintaining a balanced diet and promoting sustainable eating habits. By preparing your own veggie-packed meals, you gain control over ingredients and portions, leading to healthier lifestyle choices. I've found that sharing and experimenting with such recipes, tagged with hashtags like #flavorfuldinner and #lemon8wellness, also builds a supportive community passionate about nutritious living and food creativity.
