Recent Dishes 🫶
Since I've been losing weight, I normally eat 1 full meal with carbs, proteins, and fats. Then eat 2 small items the rest of the day. Everything is always homecooked.
I made honey cornbread from scratch with corn grits. Grounded them down to a powder and soaked them in almond milk for 30 minutes to soften up even more. Parmesean crusted mini potatoes. Stewed green beans and red kidney beans cooked for 45 minutes. I like my beans super soft. Stuffed peppers and sausage patties.
The next one is BBQ chicken bites (my own bbq recipe) and hot nashville chicken bites (my own hot nashville recipe.) Stuffing, corn salad with tajin, and stewed green beans.
Then it's my family's beef and potato stew recipe. Cabbage and onions added. I made the broth it was cooked in.
I haven't bought sweets in a while so I made a small batch of brownie/cherry ice cream. I made a little bit of my homemade brownies and used almond milk as the base. Used the ice and salt shaking method to make it creamy instead of frozen in the freezer.
A steamed sweet potato, BBQ chicken bites and cabbage salad.
Baked hot nashville and bbq chicken wings with stewed cabbage. Made a deviled egg potato salad as a side with my own dressing.
And some mac and cheese with a homemade cheese sauce. I don't like jarred cheese.
With all these meals and 2 small bites throughout the day, I have lost another 5lbs.
I substitute as many ingredients for healthier options as often as I can. Unsweetened almond milk, diet butter, avacado oil, low fat/nonfat cheese, monk fruit brown sugar, low fat mayonnaise and cream cheese. Limit the sugar intake on each sweeter item and use seasoned salt instead of just regular salt. Oh and the stewed cabbage always has to have vinegar with it.
Tbh, I haven't been able to get many groceries in the last week so I've had to pull most of these meals from whatever we had. That's why there's a few repeat items. I'll get paid tomorrow and get more ingredients for more complex meals. Some of these plates took 1.5-2 hours to cook.
