Was feeling something earl grey this weekend so I made some London fog inspired earl grey sticky toffee pudding topped with an earl grey lavender caramel sauce. And to make it even more fun I made them in my snoopy baking pan. Also decided to do a fall theme setup cause it felt like the right thing to do for these lol
* For the sticky toffee pudding I referenced the sticky toffee pudding recipe from the “tastes better from scratch” website. I added a bag of earl grey tea directly to the cake batter. I also steeped a bag of earl grey in the water I blended with the dates
* For the Earl grey lavender caramel:
- 1/2 cup heavy cream
- 1 earl grey tea bag
- 2 tsp lavender
- 1 cup sugar
- 6 tbsp butter
- Pinch salt
- 1 tsp vanilla extract
In a small pot bring heavy cream, earl grey, and lavender to a simmer. Remove from heat and let steep for 10 min. Strain into a small bowl and set aside. In another dry pot add sugar and heat over low to medium heat. Do not stir, just swirl until sugar has melted and turned an amber color. Reduce heat to low and whisk in butter then add the heavy cream. Whisk until combined. Pour into jars and let cool. Caramel will continue to thicken as it sits.
